What I Ate Wednesday #4

Welcome to my latest installment of What I Ate Wednesday, courtesy of Jenn at Peas and Crayons.

As usual, I do not take photos of everything I eat, but I have a random assortment of food for you. First of all, when I returned from last week’s travels, I had a nonstop weekend that didn’t allow me to get to the grocery store. Over the course of my trip, I ate out a bunch, ate packaged foods, and lots of candy. (Though I did stop at WF and pick up kombucha which I sipped on at the office!) When I got home, I ate pizza. Lots of pizza. On Monday I had pizza for lunch and for dinner. Oh yes, I wouldn’t lie about that.

So on Tuesday I knew it was time to give my body some healthy fuel. I went to Trader Joe’s and picked up a bunch of awesomeness. Then I headed over to the only local juicery and grabbed an “ABC” (apples, beets, carrots).

I’ve never had anything like this before and, well, I hated it. It’s true. But I gulped it down while holding my nose, because I knew my body was DYING for the nutrients.

Another little goodie I picked up at TJ’s was these roasted seaweed snacks. Unfortuantely (for me), my little 4 year old, J-Man, LOVED them and devoured them all in two sittings. No seaweed snacks for me. Boo. But yay for the fact that I’ve discovered another random and somewhat healthy food he will eat.

I guess I will have to stick to my new obsession, banana with Dark Chocolate Dream peanut butter.

Today for lunch I had kale chips and a salad (more greens anyone?). The kale chips basically went from the oven into my belly, so no pic. We all know what kale chips look like. Mine look just like that. SO FREAKING GOOD.

My salad was pretty mmm itself. I started with some basic bagged lettuce. Tossed in a handful of TJ’s “Healthy Chopped Veggie Mix”.

Broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, radish, and celery. The radishes are sort of overpowering.

Threw on a couple of TJ’s mini heirloom tomatoes:

Added some sliced baby bellas and some TJ’s lentils:

Sliced in a pickle a la @movesnmunchies, and topped with a sesame ginger dressing. The end result was pretty money.

Before I leave you, I wanted to share my awesome running experience today. I’m on week 5 of Couch to 5k. In weeks 1 through 4, the entire week was the same routine. But in week 5, they switched things up on me!  The routine throughout the week changes, and I didn’t realize it. So when I thought I’d need to run 5, walk 3, run 5, walk 3, run 5… I was wrong. Today was run 8, walk 5, run 8. And guess what.

I DID IT!!!

All thanks to the landscapers.

The what?

Well, at this time of year, the landscapers are out in full force, weeding, mulching, mowing, edging, pruning, and planting. As I was running, it seemed like I was always approaching a group of landscapers. I wanted to look powerful and strong, so I really didn’t want to stop and walk past them! Vanity, you are why I made it through today’s run. Haha!

  1. Mmm, everything looks good! sorry you didn’t like the juice… I would have LOVED that, and I love that it’s in a HUGE cup! YUM. I know many people think I’m weird, but I also love those seaweed snacks! I often eat them by themselves, but usually use them as wrappers for things. That salad looks delicious too… love the lentils!

      I’m going to get the juice a few more times and hope I develop a taste for it. They had another that I think was citrus, carrot, and ginger, which I thought sounded nice.

      • yes, keep trying! ginger is a great flavor… I’d say BEET is something not everyone likes… and carrots generally add sweetness, citrus is always good. I hope you like the next one 🙂

  2. I LOVE those seeweed sheets from TJ’s. They are my new fav. snack! So delicious. I’ve added them to some of my dinners as well. They add a unique tasty texture!

    It looks like you’re getting back on a wonderfully veggie-full track! I have never seen that veggie mix at TJ’s, it is such a great idea!

    I have to say, I am not into juice either. It’s not so much the flavor, I just don’t like the straight sugar shock that comes with carrots, apples and beets. Green juice is okay though. I don’t know how my husband drinks a huge glass of carrot juice every day… 😛

  6. Isn’t dark chocolate dreams like the best ever?!?! Oh my gosh I can’t get enough!!

    I also love those chopped veggies from TJ’s, I usually eat mine with a huuuge blob of hummus. So crunchy fresh and delicious!

    If you like those seaweed snacks…you should totally visit a Korean grocery store, they sell them cheaper and better. My favorite is one that has been glazed with–get this– GREEN TEA. Awesomeness.

      If you have a brand name, or even better, a PIC of the one you like, I’d love to try it! My problem with the ones from the Korean store is that they aren’t always labeled in English, so I sometimes can’t tell what I’m buying. Last time I tried to buy roasted seaweed at the H Mart, I ended up getting plain old boring nori.

  8. You are so much better than I am! When I don’t like something there is not a chance I will gulp it down. I was not a fan of the seaweed snacks at all either.

    Haha! I know what you mean about other people keeping you from stopping. Every time I see kids playing in a yard or grandparents rocking on the front porch or landscapers out in the yard, I just can’t let myself give up in front of them. 😛 Good inspiration!

  12. Pretty sure I would not like that juice either. Ew. Way to take it like a champ! The landscaping thing brought the LOLs. I’m the same way. If there are a group of peeps outside, I push through a walk b/c I wanna be cool. 🙂

  14. Congrats on finishing the couch to 5k! Awesome! When I’m running in my neighborhood there are ALWAYS a crap load of landscapers too! They keep me running! 🙂

  16. There are definitely healthy things I DO NOT like. Kombucha. GAG. I don’t know how anyone can find it remotely refreshing. You had excellent eats for the day and you are adorable in the last pictures 🙂

  17. I have been craving juice like no one’s business lately! I don’t know how I feel about beets in a smoothie, but any other fruit and veggie juice sounds good 🙂

  21. Wow, so many veggies! I am so impressed. Those seaweed snacks look awesome, and so does your salad! The ABC did not sound very good…glad to know you didn’t like it…I’ll stay away from that one:).

    Go back to the Korean mart for more of those snacks! SO much cheaper.

    I love Robeks! Unfortunately we do not have one here 😦 They have the best salads and smoothies though! You look great, must be all that running + healthy eating.
